Banana Nut Muffins

Banana Nut Muffins
This is my Mom's recipe, she made it for me and
my little brother growing up.  I always think
of my childhood when I bake them for my kids.
This recipe card written in her handwriting makes
me smile.  It also makes me think...I print off most
of my recipes from the web and stuff them into a folder...
So I'm going to buy some note cards and 4 boxes one for
each child and I'm going to start WRITING all their fav's...
Maybe I'll add some photos and little storys too!

I did add one extra ingredient to her perfect recipe
Banana Pudding Mix!
Its optional and will turn out great either way.
They seem to be less sticky the next day when I
add the pudding mix.  And they're even
more banana-y!

Bread Making Basics

Top 3 reasons people don't
make their own yeast bread!
#1- Time
Yeast bread has to rise for 1-2 hours in a bowl and another
1-2 hours on a pan.  Then it bakes for 25-30 minutes.  This
is the main reason no one bothers with bread making.

Solution:Oven proofing only takes 90 minutes start to finish.

Take any yeast bread recipe and use this technique.  Let prepared dough rise right in the mixing bowl for 20 minutes
(30 if whole wheat).  Then turn out onto a floured surface
and knead until smooth the more you knead the chewier it becomes.  The less you knead the softer it will be.
Prepare loaves and place in loaf pans or on a baking sheet.  If you would like a golden sheen on your bread slice the tops and brush with a beaten egg now.  Then place into a preheated 170 degree oven for 20 minutes(25 if whole wheat).  Then turn oven up to 400 degrees for 20 more minutes.  Last turn oven down to 350 degrees for 10 minutes.(note:leave pan(s) in the oven during temp changes)
If you do not have a digital temp control on your oven
check it for accuracy with an oven thermometer.

#2-Won't rise
Solution: Don't kill the yeast
Yeasty Beasties
Yeast is a living organism.  Yeast needs two things to work.
Food(sugar) and water(@115 degrees).  Place 1 tbs. sugar,
1/2 c. warm water and 2 tsp. or 1 envelope of yeast into a
small bowl and in 5 minutes you should see foamy bubbles.
If you don't, check the date on your yeast. If the date is good start over because the water was to hot.  A good thermometer
comes in handy here.  I have an instant hot water heater so
I set it at the proper temp(115F). *Tip Store yeast in the fridge.
Check out the bubbles between 1/4c and 2/3 c.

#3- It sticks

Solution:Parchment Paper and Sil Pats

I can't tell you how many loaves I ruined until I figured this one out.  Parchment paper works great for loaf pans.  Cut the paper to fit and butter, then just lift right out.  Sil Pats are wonderful for french bread.  Also sprinkle  cornmeal on the Sil Pat for an amazing bottom crust.

I hope these tips help you.  Homemade bread is so much
better for you than store bought.  You can control the ingredients. And theres nothin like the smell of fresh bread baking in the oven!

Honey Wheat Bread

Fresh Honey Wheat Bread in
1 hour and 45 minutes start to finish!

It seem that every time I try to make Wheat
Bread it turns out heavy.  So I lightened it
up by using bread flour and more yeast.
You can bake it  as a french loaf on a sheet
pan, or in a bread pan for sandwich bread,
its great either way.

New Years Resolutions

New Years Resolution #1
Read the entire Bible/Share God's Word
image
ODB
I have made this resolution every year
and have always fell short....But this year
I have a plan...On my blog list I have added
Our Daily Bread's web link.....This is a
great site It has a daily Bible study and scripture
with a link to the Bible in a year...It also has
a Facebook and Twitter link which makes it
easy to share the word....Why not share this link
we share everything else..what we had for breakfast
and how long we've been sitting in traffic....What if when
we get to heaven God says why didn't you share
my word?   I gave you Facebook and Twitter...

You don't have to be a great theologian
to witness for God if you do nothing else
just hit the share button
You never know that memory verse
could change someones day or even
LIFE

Resolution #2
Use my exercise machine for its intended
purpose....not as a clothes hamper!
This year I resolve to work out everyday and quit
blaming my kids for my roll by calling it baby fat...
I had my first baby 24 years ago and my last
over 5 years ago..I own it now!

Resolution #3
Organize every nook and cranny in
my home....Im going to make a list
and go room by room one week at a time.
I think the hardest part of organizing is training
your family to keep it that way.

Resolution #4
Tackle Photoshop Elements 10

Resolution #5
Spend more quality time with my family.
One on one time with each of my kids...And
more date nights with my husband!

Resolution #6
Finish the Farmer wife quilt

Well thats it if I accomplish all these things this year
I will be a happy camper....Good luck with all of your
Resolutions and have a Blessed 2012!
