How to Roast and Freeze Green Chiles

If you live in the southwestern part of the US then you have seen the chile roasting stands outside the market.  Hatch chiles are my favorite I can eat them like candy.........But since we have moved to the Gulf Coast I haven't been able to locate any..........so we planted chiles this spring and now they are making like crazy........instead of canning them I opted to freeze them.  Here's how...........





Roasting and Freezing Green Chiles
1. Use fresh green chiles.
2. Roast them on an out door grill, broil them in the oven or char them on a gas stove top.  Use tongs to turn them to make sure they are evenly blistered.
3. Place the charred peppers in a ziplock bag for 20 minutes or until cool enough to handle.
4. Peel the charred skins off.  I like to run cold water over them and peel them over the sink.
5. Remove the tops and seeds.
6. Slice or chop.
7. Place chiles into a freezer bag and squeeze out the air.
8. Lay the bag flat and use a bench scraper to divide the chiles into portions.  Place the bag flat into freezer.  Once it's frozen you can easily remove a chunk of chiles to thaw and add to your favorite recipe.

  1. I love this post I grew up with peppers growing in our garden which we ended up roasting and freezing every fall. In fact, I just finished making my post and saved it to drafts. There's nothing like having a supply of chillis and peppers in your freezer come winter.
