Harvest Time
In the fall I planted beets for the first time, specifically for making Beet Jelly. But then I discovered a few more uses for the beet that I'd like to share with you....Like sauteed Beet Greens, and a wonderful cake that I'll be adding later this week.........so stay tuned!

| I'm not crazy about pickled beets so I use my beets in a few different ways. First I harvest the the tender leaves to make Sauteed Beet Greens Then I make beet juice for jelly and beet puree for baking. Peel and quarter the beets. Wear gloves if you're concerneed about ruining your manicure they will stain. Place beets in a large heavy pot and cover them water.(2"above the beets). Then boil until fork tender. Drain the juice into a large glass measure bowl.(juice will stain plastic) If you have less than the jelly recipe called for add water. If you have more than called for make a double batch or freeze the extra juice and use later. I pureed my beets in my handy Ninja blender and froze them in 1 cup batches to use later in my cake recipe, which I will share with you later this week. The beet jelly looks great. Does it taste like beets or cherry Jell-O? I'm looking for good jelly recipes my husband might like on his PB&J.

ReplyDeleteMy mom used to make beet jelly. It was one of my favorites! I tried using lemon jello once. Bad idea.:)

Your beautiful photo caught my eye at Miz Helen's party -- and the rest are just as gorgeous. My mother would make jelly from anything and everything, including rose hips and corn cobs (yes, really!), but don't know that I've ever seen beet jelly! ReplyDeleteThe beet jelly looks delicious. I've made tomato, jalapeno and also watermelon jelly but never beet jelly. Might have to give it a go some day.

did you ever list your beet cake recipe. I've searched and can't find it. I'd like to make the jelly, but then I need something to do with all the mashed beets!
ReplyDeleteNo I'm sorry my pictures didn't turn out like i wanted.....I still have tons of mashed beets in the freezer I'll try to get the recipe up soon........in fact give me a few days and I'll file the recipe in my recipe box tab under cake.....and I'll ad the pic later : ) Thanks for stoppin by ..... have fun makin' beet jelly.......just freeze the mashed beets... I put 1 cup in each baggie.
