Peanut Butter & Jelly Cookies

What could make homemade 
Peanut Butter Cookies any better?
...Grape Jelly of course.


After lots of experimenting 
I finally figured out the best
way to combine the two.


 First whip up a batch of my 
"Peanut Butter Cookies"
Scoop dough out with a cookie scoop
and then use the back of the scoop
to make a well in the cookies.
Bake and cool as directed in recipe.

For the jelly filling:
Bring 
1/2 cup of your favorite
jelly with 3 tbs. of water,
3 tbs. of sugar and 2 tbs. of
heavy cream, to a boil for 3 minutes
and then let it cool(150F) until it
becomes thick(but not to thick, it
should be able to run off the spoon)
This is made much like you would
make carmel sauce.
After cookies have cooled but before
filling is to cool(150F), fill the 

well of each cookie with about 
1 tsp. of filling.
  
Your kids will love these!
