| These slightly sweet and oh so tender Sweet Potato Rolls are sure to put a smile on any Pilgrims face. |
- 2 tsp. active dry yeast
- 4 Tbs. honey
- 1/2 c. sweet potato puree
- 1/2 c. water (115 deg)
- 3 Tbs. melted butter
- 1 tsp. salt
- 2 eggs
- 3 1/2 c. bread flour
- Dissolve honey in water and add yeast allow to bloom 5 min.
- Add sweet potato, butter, salt, eggs and flour 1 cup at a time. Mix until dough clings to the hook.
- Place dough on floured surface and knead about 1 min. until smooth.
- Place in oiled bowl cover and let rise 1 hr.
- Punch dough down and shape into balls place in lightly oiled pan.
- Let rise 1 more hour.
- Bake at 375 degrees f for 15 min. or until golden brown.
I love the idea, but the recipe says "1/2 sweet potato puree", I'm assuming that's 1/2 cup... but I want to be sure..
