Ingredients:
- 1 tsp. baking soda
- 2-1/4 c. all purpose flour
- 1/2 tsp. salt
- 1 c. butter(softened)
- 1-1/4 c. sugar
- 1-3 oz package of pistachio flavored instant pudding mix
- 1 egg
- 1-1/2 c. white chocolate chips
- 1/2 c. chopped roasted pistachio nuts
1. Mix baking soda, flour and salt in a bowl and set aside.
2. In a large mixing bowl cream together butter, sugar and dry pudding mix.
3. Add egg beat until smooth.
4. Now add all the dry ingredients mix until well combined.
5. Stir in chips and nuts.
6. Spoon onto baking sheet lined with parchment paper or Sil Pat.
7. Bake @ 350 degrees for 9-10 minutes or until golden brown.

Yum - great recipe! I love pistachio pudding and the white chocolate chips is a great combo. My girls always pick out pistachios at the store so they would love this.

ReplyDeleteI've never heard of using pudding mix to make cookies. Probably b/c in Australia pudding mix is generally for self saucing puddings! :-D

Can't wait to make these. However, I'm wondering if there is anything I need to do for high altitude? I live in Colorado...and want to make sure these rise the way they should. ???
ReplyDeleteMmmmmmm....I don't know we live 26 feet above sea level.....I know that my bread rises better here than it did in Oklahoma about 1,100 feet above.....all I can say is try it... I wouldn't change the temp but you could add a smidge more baking soda...let me know how it turns out and thanks for stoppin' by : )
DeleteFinally made these yummy cookies. Didn't change a thing in the recipe & they came out perfectly! Guess the altitude didn't matter. :) the only thing I changed was the cooking time...mine took 11-12 mins. Anything less & they were too gooey. Thanks for the great recipe!
