Cheesy Ham and Potatoes

  • 6 c. potatoes(pealed and diced)
  • 2 c. cooked ham(chopped)
  • 1 small onion(chopped)
  • 2 Tbs. butter
  • 1 tbs. olive oil
  • 2 c. shredded cheddar cheese
  • 1 tsp. mustard powder
  • 1 tsp. salt
  • 1/2 tsp. red pepper flakes
  • 1/4 tsp. black pepper
  • 1/4 c. flour
  • 1 c. water
  • 1 c. milk
  Boil potatoes until fork tender.  In a large dutch oven or heavy pan saute
onion in butter and oil until translucent.  Add flour and seasonings and cook
for 1 minute.  Deglaze slowly with water while whisking.  Then slowly add
the milk while stirring.  Add ham and cook for a minute just to warm the ham.
Remove from heat add cheese stir until all the cheese is melted.  Add the
potatoes after draining them.
Serves 6
