I am so excited to be posting my first gluten-free recipe. For years I have struggled with weight problems, bad break-outs and stomach pain. I blamed it on Crohn's disease. After going on a diet and deciding to eliminate bread just for the sake of losing weight I found that all my symptoms disappeared after a few months and the weight come off too. So I am learning to cook gluten free I will still post my regular recipes but with GF alternatives. You can make this recipe with regular flour as well.

Cannellini Beans and Pasta
Simple Supper Ideas
If your looking for a simple light pasta dish look no further......this dish got 100 thumbs up from my five your old. The last few years we have really cut back on our meat intake....I wouldn't call us true vegetarians if I had to put a label on us I'd say we're 80/20. I still use bacon and chicken stock to flavor soups and casseroles. So if your looking to cut back on meat to, this is a great dish to start with. That little bit of bacon on top will keep your family freakin out about it : )

Easy Bread Sticks
Ready in 1 hour
You are gonna love this recipe it's so easy and the best part is you'll be serving up hot delicious bread sticks to your family in one hour. And you can make them a little more healthy by leaving out the butter and just using Olive oil. Or you can go the other way and cover them with mozzarella cheese in the last 10 minutes of cooking which I highly recommend : )

Banana Peanut Butter Chocolate Chip Cookies
AKA Elvis Cookies
Banana, Peanut Butter and chocolate what could be better.....Hmmmmmm NOTHING! Banana pudding mix gives these cookies a great banana flavor and makes them soft a chewy. But if your not into Elvis inspired desserts then leave out the chips and add walnuts and cinnamon and you've got "Banana Bread Cookies". If you do like this recipe then check out CMC's "King Bars" they are amazing. For more pudding mix cookie recipes click HERE.....

Hatch chiles are my favorite I can eat them like candy.........But since we have moved to the Gulf Coast I haven't been able to locate any..........so we planted chiles this spring and now they are making like crazy........instead of canning them I opted to freeze them. Root Beer Float Cupcakes
Blast from the Past
What could be better than a good old fashioned root beer float......Root Beer Float Cupcakes of course. These sweet confections are perfect for the kiddos, they love the little straws .......and adults love 'em too........me included. The cake is flavored with root beer concentrate the kind you use to make homemade root beer.....and the vanilla flavored frosting actually looks like soft serve ice cream setting on top. They are fun to eat and easy to make.........and will make you want to put on your bobby socks and do the mashed potato : )
